Whither Bill Yosses?

Bill Yosses was the pastry chef at Bouley Bakery for some years. Then he became pastry chef of Citarella, which was later renamed Josephs by Citarella. That restaurant's executive chef, Brian Bistrong — also a Bouley alumnus — left and became executive chef of The Harrison, and Bill became executive chef of Josephs.
But it closed in April, I'm trying to hunt Bill down and his e-mails are bouncing.
If you happen to know where he is, please let me know.

I saw him at an event recently. He was with Michel Niscan, which led me to believe they're working together at the Dressing Room.

Jennifer, you're a genius. I tracked Bill down through Brian Bistrong. He is, indeed, working with Michel Nischan at The Dressing Room, which is a Paul Newman-Joanne Woodward venture in connection with the Westport Playhouse (in Westport, Conn., obviously).
"We’re trying to develop a restaurant and a community interaction to support the best farming practices,” Bill told me.
They've already started a farmers market, operating on Thursdays.
The restaurant itself has a targeted opening date of mid-September.
I also learned that Bill is a partner in Boi, a Vietnamese restaurant at 246 E. 44th St. You’ll be reading about one of his desserts there in an upcoming issue of Nation’s Restaurant News.
